Tonight was our town’s Independence Day celebration and fireworks show…and we celebrated my husband’s birthday! (We can view the fireworks from our neighborhood, so we tend to combine celebrations each year!)
If you read my last post, you learned that I’ve been on the Keto Diet for a while, and now my husband is deciding to do it with me. He’s been doing a great job and I didn’t want him to fall completely off the wagon…so I decided to make Keto-friendly cupcakes for our party!

Just the cupcakes!
I loved the flavor of the cupcakes, but I wasn’t a fan of the textures. They were like soufflés (each recipe called for 7 eggs), but they had a grittiness from the coconut flour.
I ended up baking them a little longer, then putting them in the fridge for a bit. The texture turned out better, but the cupcakes were crumbly.
So, how do I fix crumbly cupcakes? By topping them with Swiss Meringue Buttercream! The creaminess of the buttercream balanced out the “crumbiness” of the cupcakes!
Here’s my favorite SMB recipe.
I altered the buttercream to use 1/2c sugar and 1/2c Swerve. And to make the chocolate SMB, I melted 4oz of unsweet chocolate and mixed it in after adding all the butter.
They turned out great in the end!
