Summertime means refreshing citrus! I love making lemon curd cakes and key lime cakes when it’s hot out there. A couple years ago, I nailed a Margarita Cake for my husband’s birthday.
I came across a recipe for Pink Lemonade Cake in my copy of “The Southern Cake Book.”

The recipe uses pre-flavored pink lemonade drink mix. Of course, I used Country Time Pink Lemonade!
My husband was not happy that I didn’t have any scraps because the cake didn’t need to be leveled! I brought it to my VBS meeting at church, and left with just enough to bring home for him!
I’ve been on the keto diet, so I’ve only taken a small bite of my daughter’s piece…but it’s mouth-puckering delicious!
