Margarita Cake

My husband’s birthday party was yesterday. The theme was TACOS! We set up a taco bar and made a jug of margaritas.

I wanted to make a “booze cake” similar to a rum cake, but with with tequila and lime.

Here’s the recipe I used.

I added extra lime juice and tequila to the icing. And I sprinkled the top with coarse sugar and coarse salt. (Trust me, the salt helped bring out the margarita flavor!)

It wasn’t as boozy as I thought it would be, but you could definitely taste the tequila. It was mellow. I used Jose Cuervo Silver, and the cake was refrigerated overnight.
